Is the nobility still tax-free or not, just like in the Middle Ages and the centuries after?

Certainly not, since the French Revolution (decrees of August 1789) all privileges associated with a title of nobility have been abolished.
In fact, if you now pursuant to art. 113 of the Constitution is ennobled by the King (knight or baron) by the King, you pay an additional registration tax (740 euros). See art. 237 and 248 Registration Rights Code via this link.
