When are green beans ripe?

Can someone explain to me how farmers/companies can tell that their green beans are ripe? So when exactly should they be harvested for optimal processing into frozen or canned products?

This in itself is not a simple question.

Beans can be used for a variety of purposes and it depends on how they are harvested. When white beans are harvested, they really strive for maturity and the pods are completely yellowed before they are harvested.

If it is intended that the pod is also harvested and eaten afterwards, the bean is harvested BEFORE it is ripe. The main aim here is to find a balance between a good yield and a bean that is not too thick. So these beans are harvested long before they are really ripe.
