Fruit is ripe when you can pick it, but what do we call the same with vegetables?

In a conversation we suddenly came up with this question.

If you can pick fruit, it is ripe.

However, if you want to pick beans or remove potatoes, we don’t speak of ripe. Is there a word that means the same but for vegetables?

I think this is a nice question. I think for vegetables as for agricultural crops it is namely “harvest ripe”.
