We have read in Burgundy that certain Bordeaux wines contain cassis. Is that right?
Answer
Bordeaux wines are made from grape juice. Only the grape varieties Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, Malbec and Carmenere may be used for this. If the sugar content is insufficient, sugar may be added (“chaptalization”). Blackcurrants (cassis) or other fruits should not be added. It is true that in many Bordeaux wines the scent of blackcurrants is found. These fragrances are created in the wine during fermentation and maturation.
