One doesn’t get going in the morning without a cup of coffee. The other swears: since she gave up coffee completely, she feels better. One thing is clear: coffee does something to the body. More precisely, it is the caffeine, the most effective substance in it.
“The effect of caffeine is pharmacological,” says Prof. Johannes Wechsler, President of the Federal Association of German Nutritionists (BDEM). This means that coffee works in a certain way, similar to a drug.
“Nevertheless, there are quite different reactions to caffeine,” says the nutritionist. Because coffee drinkers are different too. “Every body ticks differently,” says Harald Seitz from the Federal Center for Nutrition (BZfE). So what exactly is happening?
Does coffee wake you up?
Caffeine, as a chemical compound, affects the central nervous system, says nutritionist Seitz. “It has a stimulating and energizing effect, so it can increase concentration and promote performance and also help to stay awake.”
According to Wechsler, caffeine increases blood pressure and heart rate. “The theine in tea has the same effect as coffee, only with a handbrake. Tea works for hours, but less massive. Coffee acts very briefly and very quickly.”
Why do you have to go to the toilet quickly after coffee?
Coffee drives – many people can confirm that when they urgently have to go to a certain place after a cup of coffee. “The caffeine stimulates the circulation,” says nutritionist Wechsler. “As a result, the kidneys have a massive increase in blood flow.”
Because the kidneys have the task of filtering the blood, they do this more intensively and excrete the urine produced in this way. So it happens that someone who has drunk coffee has to urinate quickly and urgently.
So is coffee healthy?
Of course, coffee is not just pure caffeine. “Hardly any other food contains as many basic chemical substances and substances as coffee,” says Johannes Wechsler.
For example antioxidants: “These are substances that develop a protective effect in the body,” says Harald Seitz. “They collect the free radicals that damage our cells.” Coffee is said to reduce the risk of certain types of cancer. “But these are long-term studies in which one does not know for sure whether this is only due to the coffee,” says Seitz.
In addition, enjoying coffee should increase the quality of life of people who suffer from low blood pressure or adynamia, i.e. a state of general exhaustion and listlessness. “Coffee helps as a natural stimulant,” says Johannes Wechsler. A stimulant stimulates circulation and metabolism.
Drinking coffee in moderation also has a positive effect on the risk of a heart attack. Specifically, according to the nutritionist, this means up to three cups of filter coffee per day. “A higher amount is unfavorable again,” says Johannes Wechsler. Because too much caffeine increases cholesterol levels – and this can increase the risk of cardiovascular disease.
According to Wechsler, two or three cups a day are generally a good guideline for healthy people.

Who Can Coffee Harm?
If you have a sensitive stomach, you may not tolerate coffee well. Because its roasting substances promote the production of stomach acid, which can lead to heartburn. “These people should drink their coffee with milk because it binds the roasted substances in the coffee,” advises Wechsler.
Even people with high blood pressure or the predisposition to it should at least be careful with the amount of coffee. “A predisposition to high blood pressure can be triggered by coffee and thus hypertension can be triggered,” says the nutritionist. “If you have high blood pressure, you should drink small amounts of coffee and see how it reacts.” If necessary, you have to switch to decaffeinated coffee.
What about the acrylamide?
Acrylamide is suspected of being carcinogenic. Because the substance is produced when heated strongly, it is also contained in roasted coffee beans, as in many other foods.
There are no legal maximum amounts for acrylamide in food, only guideline values, says Harald Seitz from the Federal Center for Nutrition. “But because the roasting processes have been adapted throughout the EU, you don’t have to worry about normal coffee consumption according to the current status.”
By the way: The acrylamide content in the cup depends on how long the liquid is in contact with the coffee itself. According to the BZfE, espresso contains less acrylamide, coffee prepared with a French press significantly more – and instant coffee the most.
Can coffee make you addicted?
“A certain degree of habituation and a certain addictive effect can occur with caffeine because it is a drug in the broadest sense,” says Johannes Wechsler. “A drug is good for the human body when it derives benefits from its consumption.”
In fact, it is not an addiction, because there are no severe withdrawal symptoms with coffee. “It’s probably more of a psychological addiction.”
“A really physical addiction has not been proven,” says Harald Seitz. Something is going on in your head. However, he does not want to completely rule out physical dependence – “if there is an extremely high consumption over an extremely long period of time.” Although this cannot be determined by a specific amount. Because as already mentioned: Every body reacts differently.
