I would like to switch from frozen foods to sterilizing fruits and vegetables. Is sterilizing healthier or not healthier than frozen? What about the energy values of sterilized food compared to frozen food?

Of course deep freezing is a completely different storage process than sterilization. Ideally, vegetables are blanched before being placed in the freezer. Sterilizing requires a lengthy cooking process and this is the big difference with deep freezing. There will not be such a big difference energetically, but many vitamins are destroyed in this cooking process. Freezing is healthier than sterilization because the products then contain more vitamins.
