Dear Tim,

Blond and brown beer have many similarities in terms of the brewing process. The differences are mainly due to the raw materials used, in particular the type of barley malt. Pale barley malt is used for blond beer and dark barley malt is used for dark beer. The kilning (= removing the germs from the barley) and drying takes place at a lower temperature with a pale barley malt than with a dark barley malt. Due to the higher temperature, a kind of caramelization occurs that gives the dark color. The barley used for dark malt is also somewhat different in composition compared to the barley used for pale malt.
