If you make casein yourself (i.e. extract it from the milk with vinegar), is it still suitable for human consumption? If so, how many grams can that be?

If you heat milk and add some vinegar, you get flakes that do indeed contain casein. If you filter the moisture (the whey) from those flakes (the curds), you can make all kinds of cheese with it.
In other words, the casein (along with all kinds of other ingredients in the curds) are definitely edible. How many grams is difficult to say, but that can be quite a lot. Think of it as fresh cheese. You will not eat ten kilograms of that, one kilogram will saddle you with a very bloated feeling and 100 grams is no problem at all.
