Specifically to diabetes: fiber are complex carbohydrate molecules that we can only partially digest in our gastrointestinal tract. They will therefore ensure that there is no sudden rise in blood sugar levels in diabetics.
Fibers also ensure that we have to chew more and longer before we can swallow something. The meal therefore takes longer, so that we quickly reach the feeling of satiety. That is why it is also important for people with obesity. A diet rich in fiber will automatically make you eat more slowly, feel full more quickly, and therefore eat less.
