Can you bake lactic acid bacteria?

Will the bacteria then die or what will happen to them (in particular the Lactei Shirota Bacterium from Yakult)

If not, which bacteria can you bake?

Answer

Remco,

most bacteria, including lactic acid bacteria, will die if you heat them above 75 or 80°C for a few seconds.

Only bacteria that form spores (this is a kind of protective capsule around a cell, eg Bacillus cereus or Clostridium botulinum), can survive heating. But those bacteria are often also pathogenic, so that’s less interesting. If we want to make preserves (in cans or in glass), we have to heat until we are sure that all traces of Clostridium botulinum have been killed. And then we are talking about several minutes at 125°C.
