The bitter substances stimulate the formation of stomach acid and therefore stimulate the appetite. Flavonoids cause more bile acids to get into the intestines and thus improve digestive activity. You can easily prepare artichokes whole. Before doing this, you should remove the hard outer leaves and break off the stem. Then you let them simmer in a little salt water. When the artichokes are done, loosen the individual hard leaves and peel off the soft pulp on the inside of the leaf with your teeth. For a more intense taste experience, you can dip the leaves in a dressing made from oil, vinegar, honey and mustard.

You can soak the artichoke hearts in a little vegetable oil, herbs and spices and serve as a side dish or appetizer. They are also suitable as an ingredient for salads, pasta sauces or as a topping for pizzas. When buying, you should pay attention to organically certified goods if possible. This will ensure that the artichokes are free from synthetic chemicals Pesticides are.
