So I mean, if he’s come into contact with someone who has HIV or hepatitis B, is there a chance I could get this too? Or does the doctor not touch the needle with which he pricks your blood? I didn’t watch them draw my blood. The intern did not wear gloves (but no doctor has ever done this with me actually)

You should never touch the needle, you always keep it sterile (so don’t put it on the table, but best upright in the air). If you accidentally touch the needle, you must replace it.
If someone touches the needle there is a risk of infection, but transmission of HIV or hepatitis B just by touching the needle is non-existent. For this, the other person would first have to prick himself with the needle and even then the risk is very small.
