Is histamine in tomatoes partially or completely destroyed by heating?

Asker: Marcel, age 74

Answer

Dear Marcel,

Tomatoes do indeed contain a lot of histamine, just like in spinach, sauerkraut, beets and mushrooms. Bell peppers, rhubarb and beans also contain a fair amount of histamine.

However, heating will not change the amount of histamine much.

Is histamine in tomatoes partially or completely destroyed by heating?
