The emojitracker website keeps in real time which emojis are copied from the sites Emojipedia and Temoji. She used to get this information from X (former Twitter), but that is no longer possible.

The 1000 most popular emojis for individual countries can also be found on the emojitracker website. There you can see, for example, that the national flag in France and Germany are also very popular.
You can also find the least popular emoji (out of 1000) per country. For example, the cloud with snow is the least popular worldwide. But in Germany, for example, that is the emoji for the bath.
Homemade emojis coming
The emoji that you can use are fixed, but soon you can also make your own emojis on your iPhone. Apple calls this function Genmoji. It is a function that has been available for some time, but not yet in the Netherlands or Belgium.

You can use the function on your iPhone when you use an American account and set the iPhone with Siri on English. Apple has indicated that the function is coming to the EU this year.
To be able to make the Genmoji (and use the other AI functions) you do need an iPhone 15 Pro (€ 1,169.95), an iPhone 15 Pro Max (€ 1,220) or newer. A regular iPhone 15 or iPhone 15 Plus does not get the option to make Genmoji.
